Ingredients

Scale
  • 4 tablespoons olive oil or vegan butter
  • 1 large onion, diced
  • 4 garlic cloves, rough chopped
  • 1 lb cremini mushrooms, sliced
  • ½ teaspoon salt
  • 1 tablespoon fresh rosemary, chopped
  • ¼ cup sherry cooking vinegar
  • 3 cups hot vegetable broth
  • 5 tablespoons flour (or gluten-free flour)
  • ¾ cup sour cream (or vegan sour cream)

Instructions

  1. In a large pot over medium-high heat, warm the olive oil. Sauté the diced onion for about 3-4 minutes until golden.
  2. Add the chopped garlic and sauté for another 2 minutes.
  3. Incorporate the sliced mushrooms, salt, and rosemary; cook for 10-12 minutes until the mushrooms release their liquid.
  4. Pour in the sherry vinegar and let it evaporate for about 3-4 minutes.
  5. Sprinkle flour over the mixture; stir constantly for 1-2 minutes before gradually adding hot vegetable broth while whisking until simmering.
  6. Mix in the sour cream until fully combined.
  7. Season with pepper and adjust salt if necessary.
