  • 1 28oz can San Marzano whole peeled tomatoes
  • 48oz chicken broth
  • 2 14.5oz cans of cannellini beans
  • 4oz diced turkey slices
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • Extra virgin olive oil
  • 1lb box of ditalini pasta

Instructions

  1. Cook the ditalini pasta in salted boiling water until al dente (about 6-7 minutes). Drain and set aside.
  2. In a large pot, heat olive oil over medium heat. Sauté diced onion until translucent.
  3. Add minced garlic and cook for one minute.
  4. Stir in diced turkey slices and cook until browned (about 5 minutes).
  5. Incorporate cannellini beans with their juice, then bring to a low boil while stirring.
  6. Process the San Marzano tomatoes in a food processor until broken up and add them to the pot with chicken broth.
  7. Bring the mixture to a boil, season with pepper, then reduce heat to simmer for 15 minutes.
  8. Serve hot with grated cheese and optional toppings as desired.
