  • 1/2 cup unsalted butter, room temperature (113g)
  • 3/4 cup packed light brown sugar (150g)
  • 1 large egg, room temperature (56g)
  • 1 tsp vanilla extract (4ml)
  • 3/4 cup all-purpose flour (95g)
  • 1/2 tsp baking soda (3g)
  • 1/2 tsp ground cinnamon, optional (1g)
  • 1/2 tsp fine salt (3g)
  • 1/8 tsp ground nutmeg, optional
  • 1 1/2 cups old fashioned or rolled oats (120g)
  • 1 cup butterscotch chips (175g)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together room temperature butter and brown sugar until light and fluffy (about 2–3 minutes).
  3. Beat in the egg and stir in vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, cinnamon (if using), and salt.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  6. Fold in rolled oats and butterscotch chips until evenly mixed.
  7. Drop spoonfuls of dough onto a parchment-lined baking sheet about 2 inches apart.
  8. Bake for 12–13 minutes or until edges are golden brown. Let cool on a wire rack before serving.
