  • 1 celery stalk, diced
  • 2 cans (14.5 ounces each) diced tomatoes, undrained
  • 1 can (15 ounces) cannellini beans, rinsed and drained
  • 1 can (15 ounces) kidney beans, rinsed and drained
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 1 cup small pasta (such as ditalini or elbows)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown the ground beef or turkey until fully cooked, breaking it apart as it cooks.
  3. Add diced onion, garlic, carrot, and celery; sauté until softened.
  4. Stir in diced tomatoes and both types of beans.
  5. Pour in the beef broth and season with oregano, basil, salt, and pepper.
  6. Bring to a boil, then reduce heat and let simmer for 15–20 minutes.
  7. In the last 10 minutes of cooking, add the small pasta until tender.
  8. Adjust seasoning to taste before serving hot.
