  • 1 lb turkey sausage (or chicken)
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the turkey sausage rounds and brown for about 4–5 minutes. Remove and set aside.
  2. In the same skillet, sauté diced onion and bell pepper for 3–4 minutes until softened. Add minced garlic and cook for an additional 30 seconds.
  3. Stir in smoked paprika and black pepper, then add uncooked rice, toasting it for 1–2 minutes.
  4. Pour in chicken broth and BBQ sauce; stir to combine. Return browned sausage to the pan.
  5. Bring to a boil, cover, reduce heat to low, and simmer for about 20–22 minutes until rice is tender.
  6. Let rest off heat for 5 minutes before fluffing with a fork and garnishing with fresh parsley.
