  • ½ cup sour cream or plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 ½ cups diced peaches (fresh, canned, or thawed frozen)
  • ½ cup all-purpose flour (for streusel topping)
  • ⅓ cup brown sugar (for streusel topping)
  • ½ teaspoon ground cinnamon (for streusel topping)
  • ¼ cup cold unsalted butter (for streusel topping)
  • ½ cup powdered sugar (for optional glaze)
  • 12 tablespoons milk or cream (for optional glaze)
  • ¼ teaspoon vanilla extract (for optional glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare an 8×8 or 9×9-inch baking pan.
  2. In a small bowl, mix flour, brown sugar, and cinnamon for the streusel topping. Cut in cold butter until crumbly; refrigerate.
  3. Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
  4. Cream softened butter and sugars in a large bowl until light and fluffy.
  5. Beat in eggs one at a time, then add vanilla and sour cream until combined.
  6. Gradually fold dry ingredients into wet mixture; do not overmix.
  7. Gently fold in diced peaches and spread batter into the prepared pan.
  8. Top with the chilled streusel mixture without pressing down.
  9. Bake for 40–50 minutes until a toothpick comes out clean.
  10. Allow cooling before serving; optional glaze can be added.
