  • 1/3 cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch + 1 tbsp water
  • 1.5 cups cooked rice
  • 1 cup pineapple chunks
  • 1/2 red bell pepper (diced)
  • 1/4 cup green onions (chopped)

Instructions

  1. In a skillet over medium heat, sauté diced chicken in olive oil until fully cooked; set aside.
  2. In the same skillet, briefly sauté minced garlic until fragrant.
  3. Add soy sauce, pineapple juice, honey (or brown sugar), and vinegar; stir to combine.
  4. Mix cornstarch with water and add to the sauce; cook until thickened.
  5. Return cooked chicken to the skillet along with pineapple chunks and red bell pepper; mix well.
  6. Stir in cooked rice until everything is heated through and well combined.
  7. Garnish with chopped green onions before serving.
