  • 1 pound chicken breast, cubed
  • 1 cup pineapple, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Green onions and sesame seeds for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté chopped onion until translucent (3–4 minutes), then add garlic and ginger; cook for another minute.
  2. Add cubed chicken to the skillet. Season with salt and pepper, cooking until browned on all sides (5–7 minutes).
  3. Stir in diced bell pepper and pineapple. Pour in chicken broth and soy sauce; mix well.
  4. Add jasmine rice to the skillet, bring to a gentle boil, cover, and reduce heat to low. Simmer for about 15 minutes or until rice is tender and liquid is absorbed.
  5. Remove from heat and fluff rice with a fork. Garnish with sliced green onions and sesame seeds before serving.
