  • 1 cup diced chicken breast
  • 1 cup diced pineapple
  • 1/2 cup diced carrots
  • 1/2 cup peas
  • 1/2 cup diced bell peppers
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Add the diced chicken breast and cook until no longer pink (about 5–7 minutes). Remove from skillet and set aside.
  2. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add carrots, peas, and bell peppers; cook until tender (around 4–5 minutes).
  3. Push the sautéed vegetables to one side of the skillet. Add the cooked jasmine rice to the other side and stir together until well mixed. Incorporate the diced pineapple.
  4. In a small bowl, mix soy sauce and pour it over the rice mixture in the skillet; stir well to ensure even coating. Season with salt and pepper.
  5. Return the cooked chicken to the skillet and stir until heated through (about 2 minutes).
  6. Serve hot on plates or bowls.
