  • 1 lb boneless, skinless chicken thighs
  • 3 tablespoons coconut oil
  • 1 yellow onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 ½ cups fresh pineapple, cubed
  • ½ cup frozen peas
  • 2 tablespoons fresh lime juice
  • 2 green onions, chopped (for garnish)
  • 1 tablespoon sesame seeds (for garnish)
  • Salt (to taste)

Instructions

  1. Season chicken lightly with salt and let rest for 10–15 minutes. Pat dry before cooking.
  2. Heat 2 tablespoons coconut oil in a wok over medium heat; cook chicken for 5–7 minutes until browned.
  3. Remove chicken from the pan; add remaining coconut oil and sauté onion for 3–4 minutes until softened.
  4. Add bell peppers, garlic, and ginger; cook for an additional 2–3 minutes.
  5. Deglaze the pan with soy sauce; stir in rice, honey, pineapple, and cooked chicken.
  6. Toss well to combine; reduce heat to low and cook for another 5 minutes.
  7. Add frozen peas and lime juice; stir gently until heated through.
  8. Serve hot topped with chopped green onions and sesame seeds.
