  • 2 cups jasmine rice
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 medium pineapple, peeled, cored, and diced
  • 1 red bell pepper, diced
  • 1 cup frozen peas
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 green onions, chopped for garnish
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Rinse jasmine rice under cold water until clear.
  2. In a medium saucepan, combine rinsed rice with 4 cups of water and a pinch of salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
  3. In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add chicken and season with salt and pepper; cook until browned.
  4. Stir in garlic and ginger; cook until fragrant.
  5. Add red bell pepper and peas; cook until tender.
  6. Gently fold in pineapple chunks; cook briefly.
  7. Mix soy sauce, oyster sauce, and sesame oil in a bowl; pour over chicken mixture.
  8. Add cooked rice and mix well until combined.
