  • 1 pound chicken breast, cubed
  • 1 cup pineapple, cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Green onions and sesame seeds for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add cubed chicken and cook until golden brown and cooked through. Remove and set aside.
  2. In the same skillet, sauté onion, garlic, and red bell pepper until softened.
  3. Stir in pineapple cubes; cook for an additional 2 minutes.
  4. Add jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a boil while stirring.
  5. Reduce heat to low; cover and simmer for 18-20 minutes until rice is cooked.
  6. Return cooked chicken to the skillet; mix well and heat through for about 2-3 minutes.
  7. Serve hot, garnished with sliced green onions and sesame seeds.
