  • 1 medium pineapple
  • 1 ½ lbs boneless skinless chicken breasts
  • ½ tsp Salt
  • ¼ tsp ground black pepper
  • 1 Tbsp cooking oil (vegetable oil, coconut oil, olive oil etc.)
  • 1 cup pineapple chunks
  • ¼ cup soy sauce
  • ¼ cup water
  • 3 Tbsp brown sugar
  • 1 tsp ginger powder
  • 3 Tbsp rice vinegar
  • 2 tsp cornstarch
  • 3 garlic cloves
  • 2 cups cooked rice
  • 1 green onion (chopped)
  • ½ tsp sesame seeds

Instructions

  1. Slice the pineapple in half lengthwise and carve out the inside to create boats, reserving 1 cup of chunks.
  2. In a large skillet, heat cooking oil over medium heat. Season chicken with salt and pepper, then cook until golden brown (7–10 minutes).
  3. Meanwhile, whisk together reserved pineapple chunks, soy sauce, water, brown sugar, ginger powder, rice vinegar, cornstarch, and minced garlic in a mixing bowl.
  4. Pour the teriyaki sauce over the cooked chicken and stir well. Cook for an additional 5 minutes until the sauce thickens slightly.
  5. Fill each pineapple boat with cooked rice and top with teriyaki chicken mixture. Garnish with green onions and sesame seeds before serving.
