  • 4 large ripe plantains
  • 1 lb ground beef
  • 2 tsp adobo seasoning
  • 1 tbsp sazon
  • 1 onion (minced)
  • 3 garlic cloves (minced)
  • 1 green bell pepper (minced)
  • ¼ cup fresh cilantro (chopped)
  • ⅓ cup olives or capers
  • 1 cup tomato sauce
  • 2 cups dairy-free cheese
  • 3 large eggs (beaten)
  • Coconut oil

Instructions

  1. Preheat oven to 356°F (180°C).
  2. Grease a casserole dish to prevent sticking.
  3. Season ground beef with adobo and sazon in a bowl.
  4. Sauté onion, garlic, bell pepper, and cilantro in coconut oil until softened.
  5. Add the seasoned beef to the skillet and cook until browned.
  6. Stir in tomato sauce and olives/capers; simmer for 5-10 minutes.
  7. Cut and fry plantains until golden brown on both sides.
  8. Layer plantains in the greased casserole dish, followed by beaten eggs, meat mixture, and dairy-free cheese.
  9. Repeat layering until all ingredients are used; finish with plantains and egg wash on top.
  10. Bake for about 20 minutes or until golden brown.
