  • 2 cups granulated sugar
  • 3/4 cup water
  • 1/2 cup liquid glucose/light corn syrup
  • few drops black gel food coloring
  • 6 Granny Smith apples (or 12 small apples)

Instructions

  1. Prepare a baking sheet by lining it with greaseproof paper.
  2. Insert bamboo skewers into each apple and set aside.
  3. In a saucepan, combine granulated sugar, water, liquid glucose, and black gel food coloring. Heat over medium, stirring until the sugar dissolves.
  4. Stop stirring once dissolved and wash down the sides of the pot to prevent crystallization.
  5. Cook until the mixture reaches hard crack stage (310°F/150°C).
  6. Dip each apple into the caramel mixture, swirling to coat evenly.
  7. Place dipped apples on the prepared baking sheet to cool completely.
