  • 3 cups firm mashed potatoes (cold)
  • 5.4 oz garlic and herb soft cheese
  • 1.5 cups shredded sharp white cheddar cheese
  • 3 large eggs (beaten)
  • 8 oz sour cream or crème fraîche
  • Fresh chives
  • Garlic salt
  • Black pepper
  • 2 Tbsp grated Parmesan cheese
  • 2 Tbsp chopped chives (for mixing and garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine cold mashed potatoes, garlic herb cheese, 1 cup cheddar cheese, beaten eggs, Parmesan cheese, chives, garlic salt, and black pepper; mix until well combined.
  3. Grease a muffin tin and fill each cup with the mixture using an ice cream scoop.
  4. Top with remaining cheddar cheese.
  5. Bake for 23-25 minutes until golden brown.
  6. Allow to cool slightly before removing from the tin and serve warm.
