  • 1 Teaspoon baking soda
  • 1 Teaspoon pumpkin pie spice
  • ½ Teaspoon salt
  • 1 Cup chocolate chips
  • 1 Cup mini vegan marshmallows
  • 8 graham crackers (broken into small pieces)
  • 1 Teaspoon food coloring (orange, optional)
  • ½ Cup chocolate chips (for topping)
  • Mini vegan marshmallows (for topping)
  • Graham crackers (crushed for topping)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Cream together room temperature butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in pumpkin puree, egg, and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually mix dry ingredients into wet ingredients until just combined.
  6. Gently fold in chocolate chips, mini vegan marshmallows, and broken graham cracker pieces.
  7. Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart.
  8. Press extra chocolate chips and marshmallows on top for added flavor before baking.
  9. Bake for 12 to 14 minutes until edges are golden but centers remain soft; allow cooling briefly before transferring to a wire rack.
