  • 140 grams brown sugar
  • 110 grams coconut oil
  • 170 grams pumpkin puree
  • 200 grams all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100 grams powdered sugar
  • 2 tablespoons milk
  • 2 tablespoons maple syrup

Instructions

  1. Preheat your oven to 175°C (350°F) and grease a springform pan (20-22 cm).
  2. In a mixing bowl, beat the eggs and brown sugar until frothy. Add coconut oil, pumpkin puree, and vanilla extract; mix briefly.
  3. In another bowl, combine flour, baking powder, and pumpkin spice, then gradually fold into the egg mixture until just combined.
  4. Pour the batter into the prepared pan and bake for about 25 minutes before covering with foil and baking for an additional 20 minutes or until a toothpick comes out clean.
  5. Allow to cool before applying the glaze made from powdered sugar, milk, and maple syrup.
