  • 1 sheet of puff pastry
  • Fresh or frozen raspberries
  • 250 ml milk
  • 20 g cornstarch
  • 2 egg yolks
  • 50 g sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon butter

Instructions

  1. Preheat the oven to 190 degrees Celsius.
  2. In a saucepan, mix milk, cornstarch, egg yolks, sugar, and vanilla extract. Heat over medium heat while stirring until thickened. Remove from heat and stir in butter; let cool.
  3. Roll out the puff pastry on a floured surface and cut into eight rectangles.
  4. Place cooled custard in the center of each rectangle and top with raspberries. Fold corners over to enclose filling.
  5. Whisk one egg yolk with milk and brush over the tops of the pastries.
  6. Place on a parchment-lined baking sheet and bake for 15-20 minutes until golden brown.
  7. Allow to cool briefly before serving, dusting lightly with powdered sugar.
