  • 1 whole chicken (45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken dry with paper towels. Rub it all over with olive oil, then season with garlic, thyme, rosemary, salt, and pepper.
  3. In a bowl, whisk together orange zest, orange juice, honey, soy sauce, and Dijon mustard for the glaze.
  4. Stuff the chicken cavity with quartered onion and place it in a roasting pan. Pour chicken broth around it and brush half of the orange glaze over the chicken.
  5. Roast for about 1 hour or until golden brown and juices run clear when pierced.
  6. Baste with remaining glaze halfway through cooking.
  7. Let the chicken rest for 10 minutes after removing from the oven before carving.
