  • 1 lb frozen meatballs (beef, turkey, or vegetarian)
  • 1 packet brown gravy mix
  • 1 packet French onion soup mix
  • 4 large potatoes, peeled and chopped
  • 1/2 cup butter
  • 1/2 cup milk
  • 1 lb carrots, peeled and sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves

Instructions

  1. Cook the frozen meatballs in a large skillet according to package instructions until browned.
  2. In the same skillet, combine the brown gravy mix and French onion soup mix with water as per package directions; pour over the meatballs and simmer until thickened.
  3. Boil chopped potatoes in salted water until fork-tender.
  4. Drain potatoes, add butter, milk, salt, and pepper; mash until smooth.
  5. Sauté garlic in olive oil for 1 minute; add sliced carrots and thyme; cook until tender.
  6. Serve meatballs on a bed of mashed potatoes with glazed carrots on the side.
