Ingredients

Scale
  • 8 ounces fettuccine or linguine
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 pound fresh salmon fillet, skin removed
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. 1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente (8–10 minutes). Reserve 1 cup of pasta water before draining.
  2. 2. Season the salmon with salt, pepper, and lemon juice. In a skillet over medium heat, heat olive oil and cook salmon for 4–5 minutes per side until cooked through. Remove from heat and flake into bite-sized pieces.
  3. 3. In the same skillet, sauté minced garlic for about 30 seconds before adding chopped spinach; cook until wilted (2–3 minutes).
  4. 4. Pour in heavy cream and stir to combine, then gradually add Parmesan cheese until melted.
  5. 5. Season with lemon zest, lemon juice, and adjust with salt and pepper as needed.
  6. 6. Add drained pasta to the skillet; toss well to coat in the sauce.
  7. 7. Gently fold in the flaked salmon and adjust sauce consistency with reserved pasta water if necessary.
  8. 8. Serve warm, garnished with fresh parsley.
