  • 1 tbsp olive oil
  • 1 red bell pepper, finely chopped
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 lbs ground beef
  • ¾ cup Italian style breadcrumbs
  • ½ cup grated parmesan cheese
  • 2 eggs
  • 2 tbsp tomato paste
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • About ¼ lb deli chicken
  • 1215 large fresh basil leaves
  • 1 ¼ cup shredded mozzarella cheese
  • Marinara sauce
  • Cooked pasta or zucchini noodles, if desired

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté chopped onion and red bell pepper until soft. Add minced garlic and cook briefly before removing from heat.
  3. In a large bowl, combine ground beef, breadcrumbs, parmesan cheese, eggs, tomato paste, salt, black pepper, parsley, and the cooled vegetable mixture. Mix until just combined.
  4. On parchment paper, shape the meat mixture into a rectangle. Layer the chicken, basil leaves, and mozzarella on top.
  5. Roll the meatloaf carefully using parchment paper. Seal the edges and transfer to a baking sheet lined with parchment.
  6. Bake for about 1 hour until fully cooked. Allow to rest for 10 minutes before slicing.
