  • 2 large eggplants
  • 1 lb ground beef
  • 2 cups crushed canned tomatoes
  • 2 tbsp Turkish red pepper paste
  • 2 tbsp Greek yogurt
  • 2 tbsp olive oil
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 white onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp sumac
  • 1 tbsp Aleppo pepper
  • 2 tsp ground coriander
  • 1 bay leaf
  • Fresh mint (for garnish)
  • 1 lemon, juiced
  • 2 tbsp fresh dill, minced

Instructions

  1. Preheat your oven to 400°F.
  2. Cut eggplants into thick slices, season with olive oil, salt, and pepper, then roast for 30 minutes until tender.
  3. In a large pan, sauté onions and garlic with spices until fragrant. Add ground beef and cook until browned.
  4. Stir in crushed tomatoes and red pepper paste; mix in roasted eggplant and simmer for 20 minutes.
  5. For the yogurt sauce, combine Greek yogurt, minced garlic, dill, and lemon juice in a bowl.
  6. Serve the moussaka hot topped with yogurt sauce and fresh mint.
