  • 1 and 1/3 cup granulated sugar
  • 1/3 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 and 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 1 and 1/2 teaspoons cream of tartar
  • 1/3 cup granulated sugar (for rolling)
  • 1 and 1/2 tablespoons cinnamon (for rolling)

Instructions

  1. Preheat oven to 350°F and prepare baking sheets with parchment paper.
  2. In a mixing bowl, beat softened butter until smooth. Gradually add granulated and brown sugars, beating until fluffy.
  3. Incorporate eggs and vanilla extract until well combined.
  4. In a separate bowl, mix flour, baking soda, salt, and cream of tartar. Add this to the wet ingredients and gently fold until just combined.
  5. Shape dough into balls (about 1.5 to 2 inches) and roll in cinnamon-sugar mixture.
  6. Place on baking sheets with space in between. Bake for 9-11 minutes until edges are set but centers remain shiny.
  7. Allow cooling briefly on the pan before transferring to a wire rack.
