  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup whole milk
  • 1 cup chopped pecans (toasted)
  • 1 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, baking soda, and salt.
  3. In another bowl, cream together butter and sugar until fluffy. Add eggs one at a time and stir in vanilla.
  4. Alternate adding the dry ingredients with sour cream and milk until just combined. Fold in toasted pecans.
  5. Divide batter between greased cake pans and bake for 30-35 minutes until a toothpick comes out clean.
  6. While cooling, prepare frosting by mixing powdered sugar, butter, milk, and vanilla until smooth.
  7. Once cooled, layer frosting between the cake layers and around the outside; garnish with additional pecans.
