  • ¼ cup milk (dairy or non-dairy)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cups fresh spinach, roughly chopped
  • ½ cup crumbled feta cheese
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9-inch oven-safe skillet.
  2. In a mixing bowl, whisk together eggs, milk, salt, pepper, and optional oregano.
  3. Heat olive oil in the skillet over medium heat; sauté diced onion for 3–4 minutes until soft.
  4. Add spinach and cook until wilted (1–2 minutes). Remove from heat.
  5. Spread the sautéed mixture evenly in the skillet; sprinkle feta cheese on top.
  6. Pour egg mixture evenly over the veggies and cheese.
  7. Bake for 20–25 minutes until set in the center and lightly golden at the edges.
