  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon paprika
  • 1 teaspoon salt (divided)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 4 ounces cream cheese (softened)
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons mayonnaise
  • 1 ½ cups chopped fresh spinach
  • 1 teaspoon garlic (minced)
  • ½ teaspoon red pepper flakes

Instructions

  1. Preheat the oven to 375°F.
  2. Drizzle olive oil on chicken breasts and season with paprika, garlic powder, onion powder, and salt.
  3. Carefully cut pockets into each chicken breast.
  4. In a mixing bowl, combine cream cheese, Parmesan cheese, mayonnaise, spinach, minced garlic, red pepper flakes, and remaining salt until well mixed.
  5. Stuff each chicken pocket with the spinach mixture.
  6. Place the stuffed chicken in a greased baking dish and bake for 25-30 minutes or until cooked through.
