  • 1 carrot, shredded
  • 2 cups shredded cabbage (purple or green)
  • 1 red bell pepper, thinly sliced
  • 2 Persian cucumbers, sliced
  • 1 green onion, finely chopped
  • ¼ cup fresh mint, chopped
  • ½ cup fresh cilantro, chopped
  • ½ lb cooked chicken or tofu (substituted for shrimp)
  • ¼ cup natural peanut butter
  • Juice of 1 lime
  • 1 clove garlic, minced
  • 1 Tbsp ginger root, grated
  • 2 Tbsp low sodium soy sauce
  • 2 Tbsp rice vinegar
  • 2 tsp toasted sesame oil
  • 1 Tbsp honey
  • ½ tsp crushed red pepper flakes

Instructions

  1. Prepare the vegetables by shredding the carrots and chopping the cabbage, bell pepper, cucumbers, green onion, mint, and cilantro.
  2. Cook vermicelli noodles according to package instructions; drain and set aside.
  3. In a bowl or blender, combine peanut butter, lime juice, garlic, ginger, soy sauce, rice vinegar, sesame oil, honey, and crushed red pepper flakes; whisk until smooth.
