  • 23 tbsp cracked black peppercorns
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 shallot (finely chopped)
  • 1/4 cup brandy or cognac
  • 1/2 cup heavy cream

Instructions

  1. Generously season the steaks with salt and press cracked black peppercorns into both sides.
  2. Heat olive oil in a cast iron skillet over medium-high heat and sear the steaks for 3-4 minutes per side until browned.
  3. Once cooked to your liking, remove the steaks and let them rest covered with foil for about 5 minutes.
  4. In the same skillet, melt butter and sauté shallots until translucent. Add brandy, scraping the pan for flavor; reduce by half.
  5. Stir in heavy cream and simmer until thickened.
  6. Slice the steak against the grain, drizzle with sauce, and serve.
