  • 2 small heads of broccoli, chopped
  • 3 large chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano
  • ½ cup soy sauce
  • ½ cup honey
  • ¼ cup rice vinegar
  • 3 cloves garlic, minced
  • Sriracha (to taste)
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 2 tsp arrowroot powder + 2 tbsp water
  • ½ cup mayonnaise
  • 1 tbsp Sriracha
  • 23 tbsp water
  • Sesame seeds for garnish

Instructions

  1. Rinse rice under cold water until clear; chop broccoli into bite-sized pieces.
  2. Boil 4 cups of water in a large pot. Add rinsed rice and simmer for about 18 minutes until tender; let sit covered after cooking.
  3. In a mixing bowl, coat chicken pieces with olive oil, salt, pepper, and spices. Preheat air fryer to 375°F (190°C) and cook chicken for 15–20 minutes until fully cooked.
  4. Whisk together sauce ingredients in another bowl; simmer in a saucepan until thickened.
  5. Assemble bowls by layering rice, chicken, broccoli, and sauce; drizzle spicy mayo on top before serving.
