  • 1 lb beef tenderloin or beef shoulder, thinly sliced
  • 4 cups bok choy, chopped (separate white stems and green leaves)
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon plant-based oyster sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch

Instructions

  1. Marinate the sliced beef with cornstarch and soy sauce in a bowl for about 10 minutes.
  2. Heat vegetable oil in a wok or large skillet over medium-high heat until hot.
  3. Add the marinated beef to the wok in a single layer; sear undisturbed for about 2 minutes before stirring. Cook until browned on all sides (about 3-5 minutes total). Remove from the wok and set aside.
  4. In the same wok, add minced garlic and grated ginger; stir-fry for about 30 seconds until fragrant.
  5. Introduce bok choy stems first; stir-fry for around 2 minutes until they are tender. Then add bok choy leaves and continue cooking until wilted (about another minute).
  6. Return the cooked beef to the wok along with plant-based oyster sauce and sesame oil; toss until combined and heated through (about another minute).
