  • 6 small flour tortillas
  • ½ cup granulated sugar
  • 1 tbsp ground cinnamon
  • ½ cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup heavy whipping cream
  • 1 cup fresh or frozen strawberries, chopped
  • ¼ cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix granulated sugar and cinnamon in a bowl. Brush each tortilla with melted butter and coat with the cinnamon-sugar mixture.
  3. Bake tortillas on an oven rack or lined baking sheet for 8–10 minutes until crispy and golden. Cool completely.
  4. Beat softened cream cheese, powdered sugar, and vanilla until smooth. Whip heavy cream until stiff peaks form, then fold into the cream cheese mixture.
  5. For the strawberry topping, combine chopped strawberries, sugar, and lemon juice in a saucepan over medium heat. Add a cornstarch slurry while stirring until thickened; cool completely.
  6. Assemble by filling taco shells with cheesecake filling and topping with strawberry sauce.
