  • ¾ cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 2 cups fresh strawberries (chopped)
  • ¼ cup granulated sugar (for filling)
  • 1 tbsp lemon juice
  • 8 oz semi-sweet chocolate (chopped)
  • 1 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine flour, cocoa powder, sugar, baking powder, baking soda, and salt. Mix well.
  3. Add eggs, milk, vegetable oil, and vanilla extract; mix on medium speed until smooth.
  4. Gradually stir in boiling water until combined; the batter will be thin.
  5. Pour equal amounts into greased 9-inch round cake pans and bake for about 30 minutes or until a toothpick comes out clean.
  6. Cool layers in pans for 10 minutes before transferring to a cooling rack.
  7. For the filling, heat chopped strawberries with sugar and lemon juice until bubbly; thicken with cornstarch mixed with water.
  8. For ganache, heat cream until simmering and pour over chopped chocolate; stir until smooth.
  9. Assemble by layering strawberry filling between cake layers and pouring ganache on top.
