  • ¼ cup cane sugar
  • 1 large egg
  • ½ cup all-purpose flour
  • ½ cup oat flour
  • ¼ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 pound strawberries (small diced)
  • 2 tablespoons cane sugar (for filling)
  • 1 tablespoon lemon juice
  • 1 ½ cup rolled oats

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a mixing bowl, combine melted coconut oil, cane sugar, and egg until smooth. Add all-purpose flour, oat flour, cinnamon, and salt; mix until combined.
  3. In another bowl, combine diced strawberries with cane sugar and lemon juice; let sit for about 10 minutes.
  4. Spread the base mixture evenly in the prepared dish. Layer the strawberry filling on top.
  5. Combine remaining oat flour, all-purpose flour, melted coconut oil, cane sugar, salt, and rolled oats in a separate bowl until crumbly. Sprinkle over strawberries.
  6. Bake for about 45 minutes or until golden brown. Allow to cool before cutting into squares.
