  • 1 cup fresh strawberries (pureed)
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk (or regular milk)
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Puree the fresh strawberries until smooth and set aside.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt; whisk together.
  3. In another bowl, mix buttermilk, egg, melted butter, vanilla extract, and strawberry puree until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just mixed (lumps are okay).
  5. Heat a non-stick skillet over medium heat and lightly grease it.
  6. Pour about 1/4 cup of batter onto the skillet; cook until bubbles form on the surface (about 2-3 minutes). Flip and cook for an additional 1-2 minutes until golden brown.
  7. Serve warm topped with extra strawberry slices and syrup if desired.
