  • 1 head red romaine lettuce
  • 2 cups mixed greens
  • 1 pint strawberries (sliced, remove caps)
  • 1 cup tomato-basil feta cheese (crumbled or plant-based alternative)
  • 1 cup pecans (chopped)
  • 6 whole strawberries (remove caps)
  • 1/4 cup olive oil
  • 1 Tbsp. apple cider vinegar
  • 2 Tbsp. sugar
  • 1/2 tsp. dried basil
  • 1/4 tsp. salt

Instructions

  1. Wash and dry red romaine lettuce and mixed greens using a salad spinner. Tear into bite-sized pieces.
  2. Remove caps from strawberries and slice thinly. Reserve six whole strawberries for garnish.
  3. In a large mixing bowl, combine torn greens, sliced strawberries, crumbled tomato-basil feta cheese, and chopped pecans. Toss gently.
  4. In a small bowl, whisk together olive oil, apple cider vinegar, sugar, dried basil, salt, and reserved whole strawberries until well combined.
  5. Drizzle dressing over the salad just before serving and toss gently to coat all ingredients evenly.
  6. Transfer to a serving platter and garnish with extra tomato-basil feta cheese and pecans if desired.
