  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup sugar
  • 24 oz cream cheese, softened
  • 3 large eggs (room temperature)
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 1 box (3 oz) strawberry Jell-O
  • 1 cup boiling water
  • ½ cup cold water
  • 1 cup whipped topping (Cool Whip or whipped cream)
  • 1 cup chopped strawberries
  • 2 cups heavy cream
  • ¼ cup powdered sugar
  • 20 Golden Oreos (or vanilla cookies), crushed
  • 4 tbsp unsalted butter, melted
  • 1 box (3 oz) strawberry Jell-O powder (dry)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Mix graham cracker crumbs, melted butter, and sugar; press into a springform pan and bake for 10 minutes. Cool.
  3. Beat cream cheese with sugar until smooth; add eggs one at a time, followed by sour cream and vanilla.
  4. Pour filling over the crust and bake for 45-50 minutes; cool completely before refrigerating for at least four hours.
  5. Dissolve Jell-O in boiling water; mix with cold water and fold in whipped topping and strawberries. Spread over cheesecake.
  6. Whip heavy cream with powdered sugar; spread on top of the strawberry layer.
  7. Crush cookies with melted butter and sprinkle on top.
