  • 1 ½ cups granulated sugar
  • 6 tablespoons freeze-dried strawberry powder
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon pure strawberry extract
  • ½ teaspoon red gel food coloring
  • ½ cup sparkling sugar
  • 1 tablespoon freeze-dried strawberry powder

Instructions

  1. Prepare freeze-dried strawberry powder by blending until fine.
  2. Combine sparkling sugar and 1 tablespoon of strawberry powder; set aside.
  3. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  4. In a stand mixer, cream softened butter and granulated sugar until light and fluffy.
  5. Add eggs one at a time, mixing well; then blend in extracts and food coloring.
  6. In another bowl, whisk flour, cornstarch, baking powder, baking soda, cream of tartar, salt, and remaining strawberry powder.
  7. Gradually add dry ingredients to wet ingredients; mix until just combined.
  8. Chill dough for at least 2 hours.
  9. Form medium-sized cookie balls; roll in sparkling sugar before placing on baking sheets.
  10. Bake for about 10 minutes until tops are set; cool before serving.
