  • 4 ears fresh corn
  • 1 pint cherry or grape tomatoes
  • 1/2 red onion
  • 1/2 cup fresh cilantro
  • 1 large avocado
  • Juice of 2 limes
  • Salt and black pepper

Instructions

  1. Cook the corn in boiling salted water for 1½ – 2 minutes or grill until tender. Cool and slice off kernels.
  2. Halve the cherry tomatoes and finely chop the red onion and cilantro.
  3. In a large bowl, combine corn, tomatoes, onion, and cilantro. Squeeze lime juice over the mixture and season with salt and pepper. Toss gently.
  4. Refrigerate for at least one hour to let flavors meld.
  5. Just before serving, gently fold in diced avocado or layer on top for presentation.
