  • 500 g boneless skinless chicken breast
  • 6 tablespoons cornstarch
  • 50 ml vegetable oil
  • Salt and pepper to taste
  • 1 onion, thinly sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 6 tablespoons ketchup
  • 2 tablespoons cider vinegar
  • 6 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon grated fresh ginger
  • 2 cloves grated garlic
  • 432 g tin pineapple pieces, drained

Instructions

  1. Season diced chicken with salt and pepper, then coat each piece in cornstarch.
  2. Heat vegetable oil in a wok or large frying pan over medium-high heat until hot.
  3. Cook the cornstarch-coated chicken in the hot oil until golden brown on all sides (5-7 minutes). Remove and set aside.
  4. In the same pan, add sliced onion and bell peppers; stir-fry until tender-crisp (3-4 minutes).
  5. In a mixing bowl, combine ketchup, cider vinegar, brown sugar, soy sauce, ginger, garlic, and reserved pineapple juice; mix well.
  6. Return cooked chicken to the pan with vegetables, pour sauce over everything, add pineapple pieces, and stir gently.
  7. Allow to simmer on low heat for about 5 minutes until heated through.
