  • 1 lb boneless skinless chicken breast or thighs
  • 1/2 cup cornstarch
  • 1/4 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup soy sauce (low sodium)
  • 1/3 cup sugar
  • 2 tbsp pineapple juice
  • 1 cup pineapple chunks (fresh or canned)
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 2 tbsp vegetable oil

Instructions

  1. In a mixing bowl, combine cornstarch, salt, and black pepper. Toss chicken pieces to coat evenly.
  2. Heat vegetable oil in a skillet over medium-high heat. Cook coated chicken for about 5-7 minutes until golden brown. Remove from skillet.
  3. Mix ketchup, rice vinegar, soy sauce, sugar, pineapple juice, and cornstarch mixed with water in a bowl.
  4. In the same skillet, sauté diced peppers and pineapple for about 3-4 minutes until slightly tender.
  5. Return chicken to the skillet, pour the sauce over everything, stir well to coat, and cook for an additional 2-3 minutes until the sauce thickens.
