  • 4 small sweet potatoes
  • 1 tablespoon avocado oil
  • 8 oz shredded lettuce
  • 1 red onion, thinly sliced
  • 10 oz diced tomatoes
  • 1/2 cup pickles, diced
  • special sauce

Instructions

  1. Preheat the oven to 400°F (200°C).
