  • 5 tablespoons unsalted butter (softened to room temperature)
  • 1 cup dark brown sugar (packed)
  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 teaspoon salt
  • 1 1/4 cup evaporated milk
  • 1 tablespoon vanilla extract
  • 1 egg (for topping)
  • 1 tablespoon milk (for topping)
  • whipped cream (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Boil or steam the sweet potatoes until soft (20-30 minutes), then cool and peel.
  3. For the crust, mix flour, salt, and sugar. Cut in cold butter until crumbly. Add ice water and lemon juice until dough forms; chill for 30 minutes.
  4. Roll out the dough into a pie dish.
  5. Mash sweet potatoes and combine with softened butter, brown sugar, eggs, spices, evaporated milk, and vanilla extract until smooth.
  6. Pour filling into the crust and bake for about 90 minutes or until set.
  7. Cool before slicing; serve with whipped cream.
