  • 2 cups water or chicken broth
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning (1 oz)
  • 1 can black beans (15 oz), drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa

Instructions

  1. Rinse the rice under cold water and combine it with water or chicken broth in a large pot. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes until cooked.
  2. In a skillet over medium heat, heat olive oil and add the ground meat. Cook until browned, breaking it apart as it cooks.
  3. Stir in the taco seasoning and add a splash of water if needed. Cook for an additional few minutes until fragrant.
