  • 6 bell peppers
  • 1 lb lean ground beef
  • 1 onion, diced
  • 14.5 oz can diced tomatoes
  • 18 oz can black beans, drained & rinsed
  • 15 oz can corn, drained & rinsed
  • 2 cups cooked brown rice
  • 1 packet taco seasoning
  • 1½ cup shredded cheddar jack cheese

Instructions

  1. Preheat the oven to 350°F (175°C). Halve and seed the bell peppers.
  2. Place halved peppers in a baking dish and drizzle with olive oil; bake for 5 minutes.
  3. In a large pan over medium heat, sauté diced onion with olive oil until soft.
  4. Add ground beef to the pan; cook until browned.
  5. Stir in diced tomatoes, black beans, corn, brown rice, and taco seasoning; mix well.
  6. Fill each pepper half with the beef mixture.
  7. Cover with foil and bake for 10 minutes; uncover, add cheese on top, and bake for an additional 15 minutes until bubbly.
