  • 10 cups water
  • 1 whole yellow onion (with skin if organic)
  • 2 green onions or 1 Korean leek (for broth)
  • 2 slices fresh ginger
  • 1/2 medium radish, sliced
  • 2 tablespoons garlic, chopped
  • 1 tablespoon soy sauce
  • 1.5 teaspoons sea salt

Instructions

  1. In a large pot, combine beef short ribs and water; bring to a boil over medium-high heat.
  2. Skim off any foam that rises to the surface, then add yellow onion, green onions or leek, ginger slices, and optional green onion roots.
  3. Reduce heat to low and simmer for about 60 minutes.
  4. Add radish slices, garlic, soy sauce, and sea salt; continue simmering for another 30 minutes until the beef is tender.
  5. Remove from heat; discard solids if desired. Ladle soup into bowls and garnish with sliced green onions or leeks before serving.
