  • 190g graham crackers
  • 35g sugar
  • 75g melted unsalted butter
  • 32 oz full-fat cream cheese
  • 325g granulated sugar
  • ½ tsp salt
  • 1 tsp vanilla essence
  • 4 large eggs
  • 120g heavy cream
  • 240g sour cream
  • 1 tbsp cornstarch
  • 1 lb strawberries
  • Juice of 2 lemons

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press into the bottom of a springform pan and bake for about 10 minutes. Let cool.
  2. In another bowl, beat cream cheese with granulated sugar until smooth. Add salt and vanilla essence. Mix in eggs one at a time, then gradually add heavy cream, sour cream, and cornstarch until creamy.
  3. Pour the filling over the cooled crust and bake for 60-75 minutes until set but slightly jiggly in the center. Cool in the oven with the door ajar for an hour.
  4. For the compote, combine chopped strawberries with sugar and lemon juice in a saucepan over medium heat for about 5-7 minutes until softened. Stir in cornstarch mixed with water and cook until thickened.
  5. Once cooled completely, pour strawberry compote over cheesecake and refrigerate for at least 4 hours or overnight before serving.
