  • 2 large boneless skinless chicken breasts (cut into 1-inch cubes)
  • 1 lb twisted pasta (fusilli or penne)
  • 3 tbsp unsalted butter
  • 45 cloves garlic (minced)
  • 1½ cups heavy cream
  • ½ cup chicken broth
  • 1 cup freshly grated Parmesan cheese
  • Fresh parsley (for garnish)

Instructions

  1. Cook the pasta in salted boiling water until al dente; reserve ½ cup of pasta water before draining.
  2. In a skillet, melt 1 tablespoon of butter over medium heat. Sauté chicken cubes seasoned with salt, pepper, and Italian seasoning until cooked through. Set aside.
  3. In the same skillet, melt remaining butter and sauté garlic until fragrant. Add heavy cream and chicken broth, stirring to combine. Gradually add grated Parmesan cheese until melted and smooth.
  4. Return chicken to the skillet and add the cooked pasta along with reserved pasta water to achieve desired consistency. Season to taste.
  5. Garnish with chopped parsley before serving.
