  • 1/4 cup granulated sugar
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 pineapple (chopped)
  • 2 cups purple grapes (halved)
  • 2 cups green grapes (halved)
  • 1 pound strawberries (hulled and quartered)
  • 5 kiwis (peeled and quartered)
  • 2 large mangos (chopped)
  • 10 ounces blueberries
  • 6 ounces raspberries (optional)
  • 2 cans mandarin oranges (drained)
  • Fresh mint for garnish (optional)

Instructions

  1. In a large mixing bowl, combine apricot preserves, sugar, lemon zest, and lemon juice to create the glaze.
  2. Add chopped pineapple to the bowl.
  3. Halve the purple and green grapes; add to the mixture.
  4. Hull and quarter strawberries; add them as well.
  5. Peel and chop kiwis; incorporate into the salad.
  6. Chop mangos and mix in.
  7. Add blueberries and raspberries if using; gently stir everything together.
  8. Drain mandarin oranges before adding them to the bowl; mix lightly.
  9. Serve immediately or refrigerate until ready to enjoy. Garnish with fresh mint if desired.
